- Begin by dipping the rim of each cocktail glass into corn syrup. Then, roll them in sweetened coconut flakes until they’re nicely coated. Set aside to dry.
- In a blender, add 3-4 cups of crushed ice, along with the pineapple juice, Blue Curacao, light rum, and cream of coconut. Blend everything together until it reaches a smooth and slushy consistency, which should take about 30 seconds.
- Carefully pour the blended cocktail into your prepared glasses, filling them to the brim. Garnish with a slice of pineapple on the rim and serve immediately.
