Method
 

Steps to Make Pancakes
  1. In a large bowl, combine all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Mix well until everything is evenly distributed for a smooth pancake texture.
  2. In another bowl, blend together the eggs, buttermilk, melted butter, and vanilla extract. Stir until just combined; it’s okay if the mixture is slightly lumpy.
  3. Preheat a nonstick skillet or griddle over medium heat. Lightly grease it with butter.
  4. Pour 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on top, about 2-3 minutes. Flip gently and cook for another 1-2 minutes until golden brown.
  5. In a saucepan over medium heat, combine mixed berries, sugar, water, and lemon juice. Simmer for about 8-10 minutes, stirring occasionally, until the mixture thickens.
