Make the Cheesecake Bites
- Prepare the Cream Cheese Mixture: In a large bowl, beat softened cream cheese until it's nice and smooth. Then, add powdered sugar and vanilla extract, mixing until everything is well combined.
- Melt Chocolate: Melt the white chocolate chips in short bursts in the microwave, stirring in between to ensure a smooth consistency. Let it cool slightly before adding to the creamy mixture.
- Mix Ingredients: Gently fold the crushed graham crackers into the cream mixture, ensuring they're well incorporated. Then, carefully add the whipped topping for that light, fluffy texture.
- Chill Dough: Cover the mixture and refrigerate for 30-40 minutes. This step firms it up for easier rolling.
- Form Bites: Using a scoop, roll the chilled mixture into 1-inch balls and place them on a lined baking sheet.
- Coat in Candy Melts: Melt the red and green candy melts separately. Dip each cheesecake bite into the melts, coating evenly and allowing excess to drip off before setting them back on the sheet.
- Set and Decorate: Return the bites to the sheet, sprinkle with holiday sprinkles if desired, and let them set until the candy coating hardens.
